蔬桌VegeTable所有餐點的製作,全程均不使用如味精、化學調味料等添加物,高湯湯底的材料使用的是日本昆布。這是一個融合裸食、延壽飲食法及日本精進料理的新概念,在烹調上,師承自日式料亭的料理手法,儘量將食材本身的鮮味保持下來,不過度調理,不使用動物性脂肪,蔬桌VegeTable提供的餐點,純粹都是藉由食材本身的味道來創造美味,少鹽、少油的菜單特色,為的就是提供消費者最接近自然的用餐體驗。
