行政主廚Guillaume Brissaud - 阿勇,歷經黑腳(pied - noir)私廚的細火慢熬,把記憶中爺爺留下的味道做百分百還原,他的料理源自於他黑腳(pied - noir)的血緣背景,在法式傳統鄉村菜中帶有北非文化;爺爺所留下的家傳食譜,是他最珍惜的一份連結,所以他堅持傳統烹調的方式,毫不妥協。
BeApe法國傳統餐酒館從麵包開始都不假手他人,自己烘焙......到每份餐點、每一瓶酒都由主廚精挑細選出來,就是希望讓各國朋友都能體會到真正的法國味道,不是濃縮版的正規法國餐點。
